Sevruga, Can only be from the Acipenser Stellatus Sturgeon being the smallest of the Sturgeon species which in turn produces the smallest eggs, these are light grey to dark. Sevruga Caviar offers a full and delicate flavour appreciated by many, lightly salted at 3.5% known as “Malossol” with a Caviar roe size of 2.9mm in diameter.
This Sturgeon matures between 7-10 years go age and lives in a semi wild environment of natural lakes, and nowadays it is even more rare than Beluga as not many farms are producing Sevruga Caviar.
